Surprise your loved one this Valentine’s Day with a romantic dinner at home featuring soup. Nothing says love like a home cooked meal. Instead of dining out in a crowded, expensive, restaurant, spend a quiet evening at home enjoying this warm, comforting, totally white soup.

The colour is completely natural and comes from the vegetables and the other ingredients of the recipe.

  1. Prepare the aromatic water: Heat the water to approx. 80°C. Infuse jasmine tea for 8 minutes.

  2. Prepare the vegetables: Chop them all in coarse chunks. 

  3. In a deep saucepan, sauté the onion and ginger in the oil, over medium heat, for 2-3 minutes.

  4. Add the celery root, apple, cauliflower, salt and sauté for 2-3 minutes, stirring to combine.

  5. Pour in the aromatic water and coconut milk and stir. Bring to boil, reduce heat to low, half cover the pan and cook for 20-25 minutes, until all ingredients are tender. Set aside.

  6. Using an immersion (stick) blender, purée soup into the pot. Taste and add salt, if you like. 

    If the soup is too thick, thin it by adding a little more warm aromatic water until your soup reaches the perfect consistency.
  1. Serve hot in soup bowls and sprinkle with ground pepper, prosciutto and fresh oregano leaves.
