Pears in Red Wine

A simple yet elegant dessert. The natural sweetness of the fruit is enhanced with delicious red wine and beautiful spices.

Prepare the tart:

  1. Put the water and the wine in a saucepan together with the sugar and let dissolve over low heat. Add the cinnamon stick and the cloves and bring to a boil, then turn the heat down to reach a low simmer.

  2. Peel the whole pears leaving the stalk and when the water and wine boil immerse them and let them poach, rotating sides,  for about 40 minutes until they are tender.
    Remove from the pot and place them on a plate.

    If convenient during poaching, you can halve and core each pear.
  3. Bring the wine sauce back to a simmer and cook, stirring again, for about 15 minutes in order to let the sauce reduce and caramelize a little bit.

  4. Turn off the heat and put the pears back in the sauce so that they regain heat. To serve, place one pear into a shallow bowl and pour a stream of sauce over the fruit. 

Notes

  • This recipe is great on its own but can also be served with  whipped cream or a scoop of vanilla ice cream.
  • If you have leftover wine sauce, gently reheat it and drizzle over vanilla ice cream or waffles.
