Melt the chocolate in a bain-marie and allow it to come to room temperature.
A double boiler (or bain-marie) is simply one pot stacked on top of another. You place water in the lower pot and heat it to barely a simmer. The steam from the lower pot gently heats the upper pot where the chocolate is gradually melted. This method prevents the chocolate from burning. -
Use a food processor to pulse the biscuits to a breadcrumb consistency.

In a bowl, mix the yogurt, milk, cognac (or juice) and zest until all ingredients are well combined.

Add gently the chocolate into the mix (making sure not to over-stir) until incorporated.

Pour equal quantities of the the biscuit crumbs into the serving glasses and spoon the chocolate mix evenly over the biscuits.

Refrigerate for 4 hours or until set and chill. Serve.
Notes
- You can replace cognac with 1 Tbsp orange juice.
- Serve in individual bowls or glasses.
- Store in in the refrigerator for up to 1 week.
- Topping ideas: Crushed nuts like hazelnuts and pecans, freeze-dried berries, Fresh berries, different kinds of chocolate, orange zest.
