Add cheese, egg white and corn flour into a medium bowl, season with pepper and mix to combine until you get a thick mixture.

Cover the top surface of the bowl with plastic wrap, and store it in the fridge for about 1 hour.

Remove the plastic wrap and shape the mixture into equally sized balls (about 2 cm each).

Heat vegetable oil in a deep pot or deep fryer. Fry croquettes in small batches until golden. Drain on paper towel and serve hot.
Notes
- If you don’t want to fry them immediately, you can refrigerate.
- With the above quantities, you can have 8 cheese croquettes.
- You can add any cheese you like, provided it can melt.
- To save calories, try a light cheese mix.
- You can add nutmeg, oregano or thyme in the mixture.
- You can serve them with lemon. I prefer them plain.
