Fantastic Summer Green Bean Salad with Almonds and Raisins

A very tasty, low-calorie, refreshing salad you can make at the last minute and serve with almost anything.

Salads don’t have to be boring. This recipe is about a superhealthy salad that can be a great summer meal as it is  plenty of fresh vibrant flavours in a homemade dressing. Enjoy!

  1. Bring a pot of salted water to a boil. Add the green beans to the water and cook for about 10 minutes or so, until the beans are just barely cooked through, but still crisp. Turn off heat, carefully drain the beans  and set aside to cool down. 

  2. In the same pot, heat 10 ml of the oil and briefly saute the spring onion over medium heat for about 2 minutes. Add the green beans, the raisins and curry powder. Toss gently and cook for about 3 minutes.  

  3. Chop lettuce and peppermint, grate the carrot and place all in a large bowl. Season with salt. Put almonds in the blender or food processor and pulse until almonds are of the desired size. 

  4. Add the green beans mix in the salad bowl with lettuce. Sprinkle with the remaining oil and lemon. Add the chopped almonds. Toss gently to combine. Taste and add more lemon juice if necessary. Serve.
