Delicious Italian Pasta “7p”

An invigorating and very tasty pasta of tuscan origin. Easy to prepare, named by the fact that all seven ingredients needed to make it start with “P”.

Penne , leek (porro), bacon (pancetta), chili (peperoncino), tomato (pomodoro), heavy cream (panna), parsley (prezzemollo). Quickly said, that’s why it’s called “pasta alle 7 P”: in Italian, the letter P stands for the initial of the 7 ingredients needed to prepare it. It is kind of a star, this dish of Tuscan origin. No, it’s not exactly a light recipe. Surely, though, it is one to keep in mind for all those times when you are short on time but very hungry, because it is very simple and quick to prepare. Besides, because it is so rich, it is also a great one-pot meal perfect for the whole family.

Ingredients

  1. Bring water to a boil in a pot, add salt, bring to a boil again, add pasta and cook it according to package directions. 

  2. While pasta water is heating, begin with the preparation of the sauce. Chop finely the leek and dice the bacon. 

  3. Add oil to a large skillet. Heat oil over medium heat. Brown the leek with the diced bacon and the pepperoncino, tossing occasionally for about 5 minutes. 

  4. Reduce heat to low, add tomato puree. Bring to a simmer. Cook stirring often until thickened, about 10 minutes. Add cream and parsley, mix well and simmer for around 5 minutes. Taste, season with salt.

  5. Drain the pasta, keeping some of the cooking water aside. Add the pasta to the sauce and stir thoroughly.  

    If needed, add some of the pasta cooking water kept aside to give creaminess to the dish.
  6. Serve your penne  immediately and enjoy! 

Notes

Serve with grated Parmesan cheese to taste and chopped parsley.
