Promote your energy levels with this delicious combo of prunes, peanut butter, pistachios and chocolate. This rich and fudgy but still very healthy chocolate dessert is simple, nutritious and gluten, dairy, and sugar free! Enjoy.

  1. Add prunes, pistachios, peanut butter and cinnamon in a food processor and blend until well combined. Add chocolate chunks and pulse about 30 seconds.

  2. Transfer into a bowl and roll into balls. Place balls on parchment lined plate and put in fridge until firm, about 4 hours. 

  3. Roll in pistachio or almond crumbs to coat and eat cold or at room temperature.  

Notes

  • One serving equals to one truffle.
  • Truffles can be kept in the fridge or left on the counter, depending on ambient temperature.  Store for up to 2 weeks.
