Add prunes, pistachios, peanut butter and cinnamon in a food processor and blend until well combined. Add chocolate chunks and pulse about 30 seconds.

Transfer into a bowl and roll into balls. Place balls on parchment lined plate and put in fridge until firm, about 4 hours.

Roll in pistachio or almond crumbs to coat and eat cold or at room temperature.
