Easy Aromatic Salad with Chicken and Rice

Cook rice and peas together. Drain and allow to cool.

In a large serving bowl put the diced chicken. Add the cooled rice and peas, cucumber and herbs. Season with salt and pepper and toss gently to combine.

In a small bowl, whisk mayonnaise, mustard and oil to combine. Pour over salad and toss to coat. Serve immediately or refrigerate for max 1 hour before serving.
Notes
- This is a very versatile salad. You can add extra greens or alter the ingredient quantities. It depends on your taste.
- Side dish ideas : Serve the salad on mixed salad greens or romaine lettuce leaves, or use it to stuff tomatoes or small bell peppers.
- Use any type of grilled chicken; from a rotisserie, roasted or barbecued.
- Healthy Tip: Omit vegetable oil.
