My current recipe is dedicated (as requested) to the most famous Greek street food “Souvlaki”. This Greek favorite is one of the easiest meals you can make, and is a typical example of the Mediterranean cuisine. Enjoy and dream of hot nights in the wonderful Greek islands!!!
Some historical data from Wikipedia: The word souvlaki is a diminutive of the Medieval Greek souvla, which means skewer. In Greek culture, the practice of cooking food on spits or skewers historically dates back to the Bronze Age. Modern-day souvlaki was described by Gustave Flaubert, who observed Greeks “grilling pieces of meat on a bamboo stick” during his visit to the Boeotian countryside in 1850.
Homemade Greek “Souvlaki” with “Tzatziki” garlic sauce

Instructions
Prepare first the "Tzatziki" garlic sauce:

Grate semi-peeled cucumber on the largest holes of a grater in a bowl. Add a pinch of salt and set aside to release its liquids (about 10 minutes).

Add yogurt, garlic (using a garlic press) and vinegar in a bowl. Squeeze the cucumber with your hands so as to draw out all excess water and add it to the yogurt mix.

Add oil and mix vigorously until combined and creamy. Add salt to taste. Wrap with film and refrigerate for at least 30 minutes so as all flavors blend together. Do one last stir just before serving.
The "Souvlaki" project:

Thread meat bites onto the bamboo skewers (4 to 5 per skewer), salt, brush with oil and grill outdoors or on a stove pot using a grill pan. In the meantime, slice the tomatoes and finely chop onion and parsley.
To make the onion sweeter, chop it and leave it in salted water for about half an hour before using it. Drain and use. -
Brush pita bread with a little oil. When meat is almost ready, put also pita bread on the grill for a couple of minutes per side, until golden but soft.
You can also grill cherry tomatoes, threaded onto a skewer, and serve them as side. -
Cut pita bread in half. Serve skewers over pita, drizzling them with olive oil and lemon. Add tomatoes and the onion-parsley mix to the serving plate. Season with salt and sprinkle all with oregano and sweet paprika. Serve immediately with "tzatziki" sauce and french fries.
Notes
- To make it a real street food, wrap all together in a pita bread!
- If Greek pita bread can't be found, use Naan bread instead.
- One Souvlaki has approx. 500 kcal. Ideas to make it healthier; no french fries, wholegrain pita bread, do not oil the pita bread, use chicken breast instead of pork.
