Light Chocolate Mousse in 10 minutes

This easy Chocolate Mousse with only 4 ingredients and no eggs has a rich chocolate flavour and is the perfect way to get your chocolate fix or to end a special meal at home. A healthy, creamy and cool dessert for all.Well worth a try!

Ingredients
  • 200 g greek yoghurt (2% fat)
  • 130 g sweetened condensed milk
  • 90 g dark chocolate
  • 60 g digestive biscuits (sugar free)
  • 1 tsp cognac
  • 1/3 tsp orange zest (optional)
Instructions
  1. Melt the chocolate in a bain-marie and allow it to come to room temperature.

    A double boiler (or bain-marie) is simply one pot stacked on top of another. You place water in the lower pot and heat it to barely a simmer. The steam from the lower pot gently heats the upper pot where the chocolate is gradually melted. This method prevents the chocolate from burning.
  2. Use a food processor to pulse the biscuits to a breadcrumb consistency.

  3. In a bowl, mix the yogurt, milk, cognac (or juice) and zest until all ingredients are well combined. 

  4. Add gently the chocolate into the mix (making sure not to over-stir) until incorporated.

  5. Pour equal quantities of the the biscuit crumbs into the serving glasses and spoon the chocolate mix evenly over the biscuits. 

  6. Refrigerate for 4 hours or until set and chill. Serve.

Notes
  • You can replace cognac with 1 Tbsp orange juice.
  • Serve in individual bowls or glasses.
  • Store in  in the refrigerator for up to 1 week.
  • Topping ideas: Crushed nuts like hazelnuts and pecans, freeze-dried berries, Fresh berries, different kinds of chocolate, orange zest.
