Festive Green Salad with Homemade Chutney

A simple vibrant green salad with a touch of the magic of the holidays that will perfectly accompany your main dishes and pretty up your festive table!

Ingredients
  • 200 g mixed greens (roman lettuce, iceberg lettuce, rocket, valerian, lollo rosso etc.)
  • 2 spring onions (trimmed, chopped)
  • 4 tbsp pomegranate seeds
  • 40 g mixed berries jam (or blackberry jam)
  • 20 ml balsamic vinegar
  • 10 ml water
  • 30 ml olive oil
Instructions
  1. Make the chutney: Heat, in a small saucepan, the water with the balsamic vinegar. Once it starts to boil, remove from heat and add the jam. Stir and leave to cool.

  2. Arrange mixed greens and onions on platter, drizzle with olive oil and season with salt. 

  3. Drizzle greens with chutney dressing, spring with pomegranate seeds and serve.
