A very nutritious and appetizing dish but also a unique way to use up your leftover chicken. Try it as a light meal or as a super side dish. Enjoy!!!
Cook rice and peas together. Drain and allow to cool.
In a large serving bowl put the diced chicken. Add the cooled rice and peas, cucumber and herbs. Season with salt and pepper and toss gently to combine.
In a small bowl, whisk mayonnaise, mustard and oil to combine. Pour over salad and toss to coat. Serve immediately or refrigerate for max 1 hour before serving.
