A delicious dessert absolutely loaded with fresh strawberry flavor in each bite! Easy to make, it can be served at any occasion especially during spring and summer. Enjoy!!!
Heat 1/2 cup of water. Make sure it doesn't boil. Soak gelatin sheets in a bowl of cold water for 5 minutes until they soften completely. Remove the leaves from the water, wring gently to remove excess water, then add them to the hot water, stirring until completely dissolved.
Clean and slice the strawberries. In a food processor add the sliced strawberries, sugar and the dissolved gelatin and purée. Place the bowl with the strawberry purée in the fridge for 1/2 hour.
In a cold bowl add the cream and the icing sugar and beat until stiff peaks form. Add the whipped cream into the strawberry purée, stirring gently until mixed. Pour the mixture into a pudding mold and let it firm up in the refrigerator for at least 2 hours.
Prepare the strawberry sauce: In a food processor add 100 grams of sliced strawberries, 25 grams of icing sugar and purée. Pour into a cup and let it cool into the refrigerator.
Dip mold into a bowl of hot water for 3 seconds and invert onto center of a plate. Drizzle with strawberry sauce and decorate with fresh strawberries.
