Delicious Vegan Cake with Dates and Walnuts, no sugar

A delicious, healthy date cake, without sugar, eggs and butter! It is naturally sweet with just the fruit and is perfect for those on a diet.

Ingredients
  • 100 grams dates (dried, pitted, about 4 dates)
  • 150 milliliters plant milk (soy milk, almond milk)
  • 60 grams self raising flour (wholemeal)
  • 50 grams sunflower oil
  • 1/2 teaspoon baking soda
  • 10 walnut halves (chopped)
Instructions
  1. Heat the milk and pour it into a bowl along with the pitted dates. Let them soak for 5-6 hours or overnight. 

  2. Using a food processor, mash the dates with the milk until they form a smooth paste.

  3. Pour the paste into a bowl, add the oil and stir.

  4. Combine the flour and baking soda and add them to the previous mixture, stirring slowly.

  5. Add the walnuts and stir to spread them all over.

  6. Pour the mixture into a rectangular cake tin pan, lined on the inside with cling film.

  7. Preheat the oven to 170°C, fan and  bake for 35-40 minutes or until a toothpick or skewer inserted into the centre of the cake comes out clean.

  8. Allow the cake to cool, turn out and cut.
