Delicious Apple Tart with Almond Cream

A bake tin with apple tart

Τhere is nothing better than a piece of homemade apple tart on a winter afternoon. I have tried many recipes for apple tarts. This one is my favorite; a bit demanding but the result will really impress you. Enjoy!

Ingredients
    Pastry
  • 175 g flour (all purpose)
  • 75 g butter (unsalted)
  • 75 g icing sugar
  • 2 egg yolks
  • 1/2 vanilla powder
  • 1 pinch salt
  • Almond Cream (Frangipane)
  • 100 g butter
  • 100 g icing sugar
  • 2 eggs (medium)
  • 100 g almonds (blanched or almond flour)
  • 1/2 tsp cinammon (ground)
  • Topping
  • 3 apples (firm textured, medium-sized i.e Granny Smith)
  • brown sugar
  • cinammon (ground)
Prepare the tart:
  1. Using a mixer, beat the butter together with the icing sugar on medium speed until light and fluffy. Add the yolks one by one, beating until incorporated.

    Butter and eggs, must be at room temperature! Take care a few hours before.
  2. Add the flour, salt and vanilla and and mix just until it forms a ball. Cover dough with plastic wrap and refrigerate about one hour or until firm.

    Don't overwork or pastry will be hard when baked.
  3. Almonds cream (frangipane):
  4. Add blanched almonds to a blender and blitz until a fine, powdery flour is achieved.  Alternatively, use almond flour. 

  5. Place the butter and the icing sugar in the mixer and beat on medium speed until fluffy. Gradually add the egg yolks , beating until incorporated. Add the almond powder and cinammon and beat until you get a creamy mixture.

  6. Apple Tart assembly :
  7. Flatten dough placing it between two pieces of baking paper and using a rolling pin. Gently press the pastry onto the bottom and up the sides of the baking dish.

  8. Spread the almond cream over the tart dough.
    Core and cut the apples into thin slices. 

    You can leave the apples unpeeled.
  9. Arrange the apple slices on top of the tart in the shape you like. 
    Sprinkle on top with brown sugar and cinnamon.

  10. Bake in a preheated oven (air at 180ºC)  for about 30 minutes or until the apples are  soft but not mushy. 

Notes
  • Serve the tart warm or at room temperature with softly whipped cream or vanilla ice cream.
  • Use rectangular or circular baking dishes. I used two 5 x 11 x 18cm stoneware baking dishes (2 servings each).
