4-Ingredient No-bake Chocolate Prune Truffles

Ingredients
  • 100 grams prunes (dried, pitted)
  • 50 grams pistachios (raw, no shells, unsalted)
  • 50 grams peanut butter (smooth)
  • 25 grams dark chocolate (chunks)
  • 1/4 teaspoon cinnamon (ground - optional)
Instructions
  1. Add prunes, pistachios, peanut butter and cinnamon in a food processor and blend until well combined. Add chocolate chunks and pulse about 30 seconds.

  2. Transfer into a bowl and roll into balls. Place balls on parchment lined plate and put in fridge until firm, about 4 hours. 

  3. Roll in pistachio or almond crumbs to coat and eat cold or at room temperature.  

Notes
  • One serving equals to one truffle.
  • Truffles can be kept in the fridge or left on the counter, depending on ambient temperature.  Store for up to 2 weeks.
